Kavindapadi Nattu Sakkarai is the traditional country jaggery produced in the Kavindapadi belt of Erode district, distinguished by its natural colour, aroma and taste that come from age-old local processing. Sugarcane juice is extracted, filtered and boiled down in open pans over wood fire until it thickens, and is then set or powdered into jaggery without the chemical clarifiers used in commercial sugar making, preserving its minerals and country flavour. The fertile Cauvery-irrigated tracts around Kavindapadi grow good cane, and generations of local jaggery-makers have refined the craft of judging the boil to get the right colour and grain. Valued as a healthier, unrefined sweetener, this country jaggery is used in cooking, sweets and traditional tonics. The trade supports cane farmers and jaggery-making units in the region and sustains a traditional agro-industry of the Erode countryside.
